Mmm....Doughnuts

Friday night November 21st, I couldn't sleep. Either could Brent. We had done constructive things and still couldn't sleep. Brent had been having an itch to make doughnuts for the primary kids we were substitute teaching for on Sunday. This was our old class who we love so much and wanted to do something special because they had specifically recommended us, which of course made us feel so loved. So we got online to find a doughnut recipe. I thought I had Pat Neels from her famous Halloween time treats but I couldn't find it. I knew that those she made with mashed potatoes so that's what we looked up. We found a recipe and got it started. Before we knew it, it was almost two in the morning and we hadn't even cut out the doughnuts yet. No biggie! We were wide awake. Well we had plenty. There were doughnuts literally coming out of the freezer! We cooked a couple and then wrapped the dough up so that we could freeze them and then make them fresh for both Saturday (later that morning) and Sunday. They were quite delicious. Later that morning after the sun had come up, Brent got up and cooked some for us to have for breakfast. I was so excited to not be having stinkin pancakes (we have that a lot because it's Emma's favorite and I am so tired of pancakes). Well I needed to clean and Brent had to work on the car (post to follow after this one) so we carried on with our day. All day long I thought about those silly doughnuts though and how Brent was going to tie them into the lesson. Not that he would have to but, you know, any object lesson in my book goes a long way for learning. When I found out that Brent was teaching about the Pride Cycle I was ecstatic. What a better way to remember a cycle that always continues around then a round doughnut. I hadn't told Brent that I was going to do it but I thought if the time was right, I would tell the kids about Pride Cycle doughnuts. Sure enough, Sunday comes around and I get my chance. The kids totally got it. They even ended up calling them a few different names like pride pastries and pride doughnuts. I was mighty proud of Brent's skills in the kitchen and in the classroom! (recipe to come on the food blog soon) (also Jamie and Brandee if you can get the recipe for me from your Mom I would love to have it again!)
